Favorite holiday soup

On favorite recipes, there is no absolute answer. Obviously my favorites may not be yours. Fortunately, when we gather with family and friends around the holidays, the fun is in trying everyone’s favorites. For your next holiday party, you can try some of my favorites that I learned from family and friends.

So with that in mind, here are three of my favorite recipes.

Potato Soup

Ingredients:

  • 5 potatoes
  • 5 cans of chicken broth
  • 5 stalks of celery
  • 5 green onions
  • 1 stick of butter
  • 1 cup half n half
  • salt n pepper

Peel and cube potatoes. Add to broth in large pot and bring to boil until tender. Meanwhile, chop celery, onions in food processor. Heat butter in a saute pan. Add chopped onion and celery. Saute until soft. Add mixture to boiling potatoes. When potatoes are tender, remove from heat. Season with salt and pepper to taste. Add half n half and stir.

If you like creamy soupy, mash the potatoes. Enjoy in a mug. Serves 12.

Cheesy Sausage Dip

My favorite dip

Okay, everyone knows Velveeta® and Ro-Tel™. Same recipe, just add 1 lb cooked breakfast sausage. I prefer Jimmy Dean’s Hot. Be sure to drain the extra grease. Also, I like mine in a slow cooker. And if you aren’t familiar with the recipe, here we go:

Ingredients:

  • 2 Lb Velveeta® cheese block.
  • 1 can Ro-Tel™ tomatoes and chiles
  • 1 Lb Jimmy Dean Hot Sausage

Cube the Velveeta® into about 1 inch cubes. Place in slow cooker set on high. Add Ro-Tel™ (drained for a thicker dip.) In a saute pan, brown the sausage until done. Drain completely and add to cheese mix. Stir until completely uniform. Enjoy with your favorite dipping chips or crackers.

Guacamole a la Derrel

I am not a fan of the big chunks of onion, pepper, etc. in my guac. I like it creamy. To that end, here’s my take on this southwestern favorite.

Ingredients:

  • 2 medium avocados
  • 1/2 tomato, diced and drained
  • 1 large pickled jalapeno, diced.
  • 2 tspns garlic salt
  • 1 tspn onion powder
  • 2 tspns lemon pepper.

Peel and remove the seed from the avocados. Cut into small chunks. Add the diced tomato and jalapeno. Add all seasonings and stir with fork until desired consistency. Garnish with a few tomato cubes. Enjoy with your favorite tortilla chips.
